Strawberry Basil Salad

Strawberries are plentiful right now and this easy salad makes a fantastic side with your main course- or add chicken and turn it into a main course salad! The sweetness of the strawberries and tartness of the dressing make an unexpectedly delicious combination

INGREDIENTS

  • 8 cups romaine lettuce, torn (or a large salad bowl full)
  • 2 cups sliced strawberries
  • 1/2 cup sliced sweet onion
  • 1/4 cup torn fresh basil
  • 3 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1/2 teaspoon salt

DIRECTIONS

-Toss romaine with torn basil.

-Top romaine/basil mixture with strawberries and sweet onion. Add chicken if desired for a main course salad.

-In a separate bowl, whisk together olive oil, balsamic vinegar and salt.

-Toss dressing into salad and serve immediately. If you don’t think you’re going to eat it all in one sitting, you might want to serve dressing on the side or pour it over individual salads.
