My kids grew up, I got a divorce, and I finally left the suburbs for the heart of Nashville, where I feel like I truly belong. I have no idea what the future will hold and you know what? This is my favorite muffin recipe. They’re easy to make and perfect for a special breakfast, an after-school snack or your child’s lunchbox. And the streusel on top makes them a divine gourmet treat.
INGREDIENTS
Streusel:
DIRECTIONS
-Cream butter and sugar in mixing bowl. Add beaten egg, mix well.
-Mix together flour, baking powder and salt. Add to creamed butter mixture a little at a time, alternating with milk.
-Stir in vanilla. Gently fold in blueberries.
-Fill 12 greased muffin cups 2/3 full with mixture.
-For streusel, in a small bowl, mix together sugar, flour and cinnamon. Cut in butter, mix until crumbly. Top muffins with crumb mixture.
-Bake muffins at 375 degrees for 25-30 minutes or until toothpick inserted into the center comes out clean.
